It's cold and the corn is freezing today

 













Have you ever had elote? It’s a holy trinity of corn, mayo, and cheese with chili powder and lime juice? Then you should start freezing the corn on the cob that is currently on sale at your local store. I'll show you a way to freeze that corn in a matter of minutes.....the whole thing. Husk and all. You be making elote..... months from now.

Prune off the tail of the corn....I do the tip too. Next.....take that cob and tightly wrap plastic wrap to it.....like a mummy....2 - 3 layers.  Now slap it directly into your freezer! No need for blanching and all that other stuff.

So...........now you want corn! Take it out of the freezer....and chuck it into a water filled cooler box as below. The trick to grilling corn in the husks is to soak the corn first...and you will be defrosting corn at this stage


















Cook over medium heat on gas or over charcoal as below














 Don't worry when the husks turn black - that's normal
